Eggplant Soup Recipe
Eggplant Soup :
Many people like sour taste in their food. For them, brinjal khatta is a delicious dish.
Ingredients:
3 large eggplants, 2 teaspoons of turmeric powder, 2 teaspoons of chili powder, half a teaspoon of coriander powder, 1 teaspoon of cumin powder, as much salt as needed, 1 cup of soybean oil, roasted cumin powder, less than half a cup of prepared tamarind decoction, 1.5 tablespoons of onion paste, 1 tablespoon of beresta, a small amount of coriander leaves for taste, and 5 sliced green chilies.
Method:
Cut the eggplant into round pieces and soak them in water (otherwise they will turn black). The black skin will be washed off. Mix the eggplant with salt, turmeric, and chili powder in a bowl and place a pan on the stove. When the pan is hot, add the oil and fry the eggplant. Stir the onion paste with the remaining oil in the pan and fry the remaining spices one by one. Now boil it well with a cup of hot water and add the fried eggplants. When the broth reduces, add tamarind broth and green chilies. When the broth becomes thick, add coriander leaves and roasted cumin powder and then serve this delicious dish with the prepared beresta.
